How do you compete against this?

I have to agree with alot of the people on here. I would have bet after the flop. That being said, personaly I would have thrown the hand away when you went all-in. I think it was definately a strange call (I've made worse I'm sure), but I wouldn't have wanted him to get that far.
You can second guess everyone's play including your own until you are talking in circles. Everyone has their own style and I am by no means anywhere near an expert, so this is just my opinion and not a criticism. Just stating how I would have handled it.

If i ever get into this situation with this fella again, I will bet the flop, because he has very loose calling requirements. I did not know this at the time, and did not want to be betting into a guy who slow plays the nutz with KK.

What do you want to hear?
You ask how to beat it, you then proclaim you played properly and made no error, and you would do it again. You reject everyones reasons and lastly you answered your own question:
He went out chasing hands a few hands later.
He chased, he caught. The fish get to eat sometimes. Hell he might have legitimately thought you were betting a flush draw on the turn trying to get him out in an act of desperation. In that case he might have won on a high card.
While it wasn't a great call for sure he did it. It's like watching someone flop 7s full of 2s. What the hell was he calling in 72 for? Whatever the reason he gets your chips.
Find him again, keep betting into him on those draws. You'll get teh better of him. I am sure the guys who put him out a few hands later were very happy with his play.
