rules to keep players playing

I want to hold semi regular texas holdem nights. Ideally 7-8 players, $25 buy in for your chips, winner take all. I don't want the games to go 7pm-7am. so we want to have a time limit. What rules do I implement to stop the guy with the most chips from folding in the last hour to conserve the chips? Is the best way to make the blinds large enough to eat away at him if he chooses
poker winner? Does anyone else have ideas I can use?

1) Don't make it winner take all. Maybe pay two places to keep interest going.

2) What you're really looking to host is a sit-and-go tournament, not a cash game. There's threads around for various ideas on blind structures, but essentially, try starting out with some blind structures and round times, then fiddle with them until you get the type of game you like.

Basically if you just keep increasing the blinds every X minutes, the game will have to end at some point. It's all about finding the right X minutes per level and the right levels to get the game to run roughly as long as you want it to.

Yes, I do agree with half. you must have to manage it very properly when you have to raise and try to raise according to game. 8-)
